Full of gratitude, and just plain full.

Even though Thanksgiving is basically the gateway to the Christmas season, and turkey ranks around number 4 for my favorite holiday meats, I still enjoy hosting the feast.

Today was a wonderful day filled with food, laughs and more food. And did I mention the food?

I thought I’d share my recipe for figs that I made as an appetizer today – they are super easy and crazy good.

Recipe: blue cheese stuffed figs wrapped in blue cheese

Ingredients

2 packages of figs, cleaned, stems cut off and cut in half

About 4oz blue cheese (a wedge, not crumbles)

3/4 pound prosciutto, sliced thin, and cut into strips about 1/2” to 3/4” wide (you’ll have some left over to snack on)

Directions

Preheat oven to 425 degrees.

Line a baking sheet with parchment paper.

Cut a piece of blue cheese off the block. It will be crumbly. Press a small piece of cheese into the flesh of the fig and wrap a strip of prosciutto around the fig. Place on parchment. Repeat with remaining ingredients.

Bake at 425 degrees for 10 mins. Remove from oven and drizzle with honey.
